Founded in 2023, Potenza Centrale was named in honor of the town in Italy where the owner was born and raised. Potenza Centrale offers a unique take on pizza and flatbread. We ferment our dough between 72 and 96 hours for optimal structure; the fermentation provides a softer and chewier crust with more complex flavor. Our dough is highly hydrated making it airier and lighter than traditional dough, as well as making it crunchy. Everything we make begins with superior ingredients. All of our ingredients are responsibly sourced from local farms and purveyors. With us, you can taste the freshness in every bite. Our dough is made fresh in house daily and gluten-free friendly. Made using different grained flour (rice, soy, sourdough, and high protein flour), our pizza is easier to digest than normal pizza. Our homemade mozzarella is as fresh as it gets. Made in house daily by our chef, you can truly understand what fresh mozzarella should taste like at Potenza Centrale. Our homemade ragu is made using red cherry tomatoes from Southern Italy. Our ragu is slow-cooked for four hours. We sell our sauce by the jar and invite the public to bring their own jars for takeout.
